Made this tonight, turned out awesome. Try it yourself, think you will like it. This is a weighty dish, literally, so handle appropriately when moving and removing from the oven.

Ingredients

  • 2 lbs ground beef
  • 1 med onion chopped
  • 1 can of good quality mixed vegetables, drained OR you could use frozen vegetables (peas, carrots)
  • 1 can of corn drained
  • 6 to 8 button mushrooms, sliced
  • 2 tbps of butter
  • 1 large jar of Hines savory beef gravy
  • 1 tsp salt or to taste
  • 1/2 tsp pepper
  • Mashed potatoes: (this can vary depending on how you like to make your mashed potatoes.)
  • 6 medium potatoes, pealed and thickly sliced (I usually would not use russet potatoes for my mashed potatoes, but only had about half the potatoes I needed of the waxy potatoes and they turned out just fine.)
  • 4 tbsp butter
  • 1/2 cup of warm milk, more if needed (added slowly as you mash)
  • 1 1/2 tsp salt or to taste
  • 1/2 tsp pepper

Step 1

Peel the potatoes and cut them up and get them started for the mashed potatoes. Add salt to the water. Let boil for about 20 minutes.

Started the ground beef in a large frying pan, half way through add the chopped onion. Once beef is browned drain the fat off. Set aside. In a small fry pan chop the mushrooms and saute in a little butter. Add them to the ground beef. Add the vegetables, corn and the beef gravy. Bring to a simmer stirring gently to incorporate all the ingredients. Taste for salt and pepper Will probably need at least a teaspoon of salt. Turn off the heat and start the oven on broil.

Drain the potatoes, add the butter (I add in pats so it melts better). Slowly add the milk as you mash with a potato masher. Add salt and pepper to taste. Add more milk or cream if you want the potatoes less thick.

Top the beef mixture with dollops of the mash potatoes smooth dollops together and try to form some nice peaks for browning. Place the whole thing under the broiler for five minutes.

Be careful removing will be hot and heavy!
