Ingredients

  • 3 lbs pork roast (shoulder or butt)
  • Barbecue Sauce (ingredients following)
  • 1 1/2 cups cider vinegar
  • 1 cup ketchup
  • 1 cup brown or yellow mustard
  • 1/2 cup packed brown sugar
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1 tsp cayenne (optional)
  • 1/2 tsp black pepper

Step 1

Place the roast in a slow cooker with 1 cup of water.
Cook on low for 8 – 10 hours, or high for 5 – 6 hours.
Remove the roast from the cooker and place on a cutting board.
Drain and discard the cooking juice.
Allow the roast to rest for a few minutes while preparing the sauce.
For the barbecue sauce, combine the vinegar, ketchup, mustard, brown sugar, garlic, salt, cayenne (if using) and black pepper in a small saucepan.
Bring to a simmer and cook for 10 minutes.
While the sauce is simmering, use two forks to pull the roast apart, shredding pieces of meat off of the roast.
Place the pulled meat back into the slow cooker.
Pour half of the sauce over the meat and stir well.
If desired, cook on high for another 20 minutes, or on low until serving.
Serve with additional sauce.
