Biscotti Recipe PRINT
|½||c. whole wheat flour|
|1||c. granulated sugar|
|½||tsp. baking powder|
|5||tbsp. cold unsalted butter, cut into pieces|
|⅔||c. chopped dried apricot halves|
|1||c. shelled natural pistachios|
|1||tsp. granulated sugar(separately)|
Preheat oven to 350 degrees.Brush a baking sheet with butter & keep aside.Blend flour,sugar,baking powder,salt & unsalted butter,in a food processor.To this add vanilla,mix it up well,till it makes a coarse mix.Beat eggs & add to the mix.It’s time to add apricot & pistachios & blend it till it is moistened.
Pour out the mixture into a bowl & make a dough with hands & divide this dough into half.Spread these halves on the sheet in a long shape.Sprinkle sugar over this & bake till it turns brown(it should take you 25 mintues to bake).Remove it from the sheet & cool on the rack.Cut these out into shape of your choice .Place these back on the sheet,with the side side up & bake till lightly brown.Once baked transfer it to the rack & cool it.
