Preparation

Step 1

1. Toast bread (I grilled using a counter-top electric grill) and remove to plate.
2. Grill ham and place on top of bread.
3. Add water (and other poaching liquids) to medium pot about 2" shy of the top. Add extra herbs, salt & pepper or other spices if desired.
4. Bring poaching liquid to a medium to medium high boil.
5. Just as the larger bubbles begin to form, stir liquid in a circular motion around edges of pot to create a 'whirlpool' in middle.
6. Crack egg and gently pour into middle of whirlpool.
7. Continue stirring around outer edges of liquid to maintain whirlpool while not disturbing egg for several minutes. Be careful not to break yolk.
8. Once the egg is cooked to your liking carefully remove with slotted spoon.
9. Place egg on top of ham.
10. Top with tomato soup, salsa, hot sauce, cheese, thyme.
11. Salt & pepper to taste.
12. Serve immediately.

Enjoy!
