Ingredients
- 1/3 cup sugar
- 1/4 cup light corn syrup
- 3 tablespoons unsweetened cocoa powder
- 6 ounces bittersweet chocolate (about 70% cacao), chopped
- 1/4 cup bourbon, whiskey, or rum
- 1/2 teaspoon kosher salt

Preparation
Step 1
Bring sugar, corn syrup, cocoa powder, and 1 cup water to a boil in a medium saucepan over medium-high heat, stirring to dissolve sugar. Reduce heat and simmer until it begins to thicken, 10–12 minutes. Add chocolate, bourbon, and salt and return to a simmer, whisking.
Cook, whisking, until sauce is thick and glossy, about 5 minutes. Let cool slightly before serving.
Do Ahead: Sauce can be made 1 week ahead. Let cool; cover and chill.
