  • 1 pound asparagus, trimmed
  • 1/4 cup pine nuts
  • 2 cloves garlic, minced
  • Salt, to taste
  • 1 teaspoon lemon juice
  • 1/3 cup extra-virgin olive oil
  • 1/2 cup grated Parmesan cheese

Step 1

Fill a skillet about 1 inch high with water and bring to a boil. Add the asparagus and cook until bright green and crisp-tender, about 4 to 6 minutes.

Combine pine nuts, garlic and salt in a food processor and mince finely. Add the asparagus, lemon juice and olive oil and mince finely. Add Parmesan and run machine just to combine. Makes 6 servings.
