Coffee and Cream Cookies

Ingredients
- 2 cups flour
- 1/4 cup cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon espresso powder
- 1/4 teaspoon salt
- 1 1/2 stick butter (softened)
- 1/2 cup brown sugar
- 1 cup granulated sugar
- 2 eggs (beaten)
- 1/4 cup semi-sweet chocolate (melted)
- 1/2 cup semi-sweet chocolate chips
- 1/2 cups chocolate covered espresso beans (chopped)
- 1 cup mascarpone (softened)
- 2 tablespoons powdered sugar

Preparation
Step 1
Preheat oven to 375°F.
In a large bowl, whisk together flour, cocoa powder, baking soda, espresso powder and salt.
In another large bowl, cream butter, brown sugar and granulated sugar.
Add eggs one at a time until well incorporated.
Stir in melted chocolate.
Stir dry ingredients into the wet ingredients in 2 parts.
Fold in chocolate chips & espresso beans.
Scoop a large marble size (about 2 teaspoons) of dough onto a prepared cookie sheet. Repeat with remaining dough. Bake 10-12 minutes. Cool completely on a baking sheet.
For Mascarpone Whipped Cream: Beat mascarpone and powdered sugar with an electric mixer until creamy and smooth.
To build sandwich cookies: Smear a bit of the marscapone mixture onto bottom of a cookie and sandwich with another cookie on top.
Tips
- Make the cookie dough ahead, wrap in plastic and freeze. Slice and bake when ready!
