Ingredients
- For the frosting:
- 1/2 cup light cream cheese,
- 1/2 cup peanut butter,
- 1/2 cup butter.
- Sweeten to taste. I used 1/2 tsp pure stevia. (I have a major sweet tooth.)
- For the cookies:
- 3 cups almond flour,
- 1/4 tsp real salt,
- 1/2 tsp baking soda,
- 1/2 tsp pure stevia,
- 1 1/2 cup peanut butter,
- 1 cup egg whites.

Preparation
Step 1
Frosting:
Let them all soften and mix well. Set to the side.
Cookies:
I mix it all up with a fork, rolled 1 1/2 inch (approximate) size balls and flattened them to the thickness I wanted them (like 1/4 of an inch). They spread very slightly. I baked these around 13 min. in a preheated 350 degree oven (until they looked toasty). They were crunchy and moist. Not flaky, not sticking to the roof of my mouth. Really, I have to say, I shocked myself. The texture was perfect. Things always work out better for me when I eyeball things so I hope these turn out for you. Happy baking!
