Preheat oven to 375. Combine all cookie ingredients. On a lightly floured surface, roll dough out thinly and cut out with a round cookie cutter or a glass to desired size, making certain to arrive at an even number, as these will be sandwich cookies. Transfer with a metal spatula to ungreased cookie sheets and sprinkle lightly with sugar. Bake for about 10 to 15 minutes or until golden brown. In a saucepan, combine filling ingredients. Cook over medium heat for 3 minutes or until thickened and bubbly. Cool to room temperature. Spread on the bottom of half of the cookies; top with remaining cookies.
