Carmelized Brussels Sprouts with Pistachios

Ingredients

4 T butter
4 msall red onions, thinly sliced
¼ C + 2 T wine vinegar
4 lbs brussels sprouts
2 T sugar
Salt & pepper
½ C pistachios, coarsely chopped

Directions

Melt butter in large deep skillet. add onions & # T of vinegar & cook over mod heat til they begin to brown, 5-6 min. Steam brussels spoouts til crisp, 5-6 min. add to onions. Stir in sugar & remaining 3 T vinegar & cook over mod heat, tossing til brussel sprouts are tender and lightly caramelized, 8-10 min. season with salt & pepper. Transfer to bowl, garnish with pistachios.
