| 4 | T butter |
| 4 | msall red onions, thinly sliced |
| ¼ | C + 2 T wine vinegar |
| 4 | lbs brussels sprouts |
| 2 | T sugar |
| Salt & pepper | |
| ½ | C pistachios, coarsely chopped |
Melt butter in large deep skillet. add onions & # T of vinegar & cook over mod heat til they begin to brown, 5-6 min. Steam brussels spoouts til crisp, 5-6 min. add to onions. Stir in sugar & remaining 3 T vinegar & cook over mod heat, tossing til brussel sprouts are tender and lightly caramelized, 8-10 min. season with salt & pepper. Transfer to bowl, garnish with pistachios.
