Ingredients

  • 12 oz. ziti or penne
  • 2 teaspoons canola oil
  • 1 pound ground skinless turkey breast
  • 1 onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 (24 oz) jar marinara sauce
  • 1 cup part-skim ricotta cheese
  • 1 cup shredded part-skim mozzarella cheese

Preparation

Step 1

1. Cook the ziti according to package directions, then drain and set aside, while preheating oven to 375*F.

2. Meanwhile, heat the oil in a large nonstick skillet, then add the turkey, onion, bell pepper, salt and pepper. Cook, stirring often, until all pan juices evaporate and the turkey is browned, about 10 minutes.

3. Stire in the ziti, marinara sauce and ricotta. Spoon the mixture into a large nonstick baking pan. Top with the mozzarella cheese. Bake, uncovered, until the filling is hot and the cheese is melted, 40-50 minutes.
