Ingredients

  • 3/4 cup of gluten free all-purpose flour
  • 3/4 cup of certified gluten free oats
  • 1/2 cup of brown sugar
  • 1/2 teaspoon of baking powder
  • Pinch of salt
  • 1 stick of dairy-free butter
  • 1/3 cup of apple butter - or favorite jam/ jelly
  • 1/3 cup of SunButter sunflower seed spread - we used the No Sugar Added variety

Preparation

Step 1

Preheat oven to 350 degrees and grease an 8x8 glass baking dish then set aside.
In a large bowl, combine the DRY ingredients and blend together.
Cube the stick of butter and add to the dry oat mix.
Cut the butter into the mixture. Make sure it is fully incorporated. (Like you would when making a pie crust.)
Pour half of the mixture into your baking dish. Spread it out into an even later. Press the mixture firmly down into the baking dish to create a solid layer.
Spread on, very light, the layer of apple butter first. (If you're worried yours might not spread easily, try warming it first to help it spread easier.)
Add layer of SunButter next. (Same tip: Warm the SunButter in a bowl in the microwave first to help it spread easily, if needed.)
Finally, top with remaining oat mixture. Press oat mix lightly into the dish.
Bake for approximately 40 minutes.
Let COOL COMPLETELY before slicing.
