Ingredients

  • Coating:
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Cookie Dough:
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 sticks unsalted butter, at room temperature
  • 1 1/2 cups granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 1/2 teaspoon rum extract
  • 2 large eggs, at room temperature

Preparation

Step 1

Coating:
In a small bowl mix 1/4 cup sugar cinnamon, and nutmeg. Set aside.

Cookie dough:
In another bowl, place 2 1/2 cups flour, cream of tartar, salt and baking soda. Stir well. Set aside.

In a larges bowl, place butter, 1 1/2 cups sugar and extracts and beat with mixer 3-4 minutes until fluffy. Add one egg and beat in. Add the other eggs and beat again. Add 1/3 of flour mixture and mix. Add second 1/3 of flour and mix again. Add last 1/3 flour and mix well. Refrigerate dough for about 30 minutes and up to 2 days.

With a 1 tablespoon ice cream scoop, scoop out dough and roll into a ball. Then roll in cinnamom/nutmeg/sugar mixture. Place balls on parchment lined cookie sheet about 2 inches apart. Bake for 8-10 minutes at 400 degrees (check after 8 minutes for doneness) until lightly browned on bottom. Let cool completely. Serve.
