Ingredients

  • 1/4 cup AP flour
  • 1/2 cup whole wheat pastry flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 1 tablespoon maple syrup
  • 1/2 cup pomegranate arils
  • 1/4 cup dark chocolate chips

Preparation

Step 1


Combine all ingredients except pomegranate arils and chocolate chips in a medium bowl and whisk until mixed well.
Fold in arils and chocolate chips.
Heat a pancake griddle or pan over medium heat. Grease with butter or cooking spray and pour batter onto pan.
Cook for 1-2 minutes on each side or until pancake is cooked through.
Repeat with remaining batter.
