Super-quick and easy to make, quesadillas make a great weeknight supper. You can make extra and pop them in the freezer for another day.

Ingredients

  • 6 flour tortillas (8-inch)
  • 2 cups cooked chicken, diced
  • 2 cups shredded cheese (I use cheddar or Tex-Mex)
  • 1/2 cup roasted red pepper, chopped (optional)
  • 1/3 cup chopped scallions
  • Salsa and sour cream for serving

Step 1

For each quesadilla, place about 1/4 cup shredded cheese on one half of the tortilla. Top with about 1/4 cup chicken, a couple tablespoons of peppers and a sprinkle of scallions. Add a little more cheese if you like. Fold the tortilla over and place into a medium-hot pan that has been sprayed with cooking spray. Cook until the first side is golden brown, then flip and cook until the other side is browned and the cheese is melted throughout. Remove from pan, slice into quarters and serve with salsa and sour cream on the side. Enjoy!
