This fun Easter Bunny cake needs only two round cake pans to shape into a round bunny body, an inside circle for the head from one of the pans and the remaining edges for the ears. Or you can just make the head of the bunny from one of the pans and cut out the ears from the other pan.

Ingredients

  • 1 (18.9 ounce) package Pillsbury Spring Funfetti Cake mix (or something similar)
  • 2 (15.6 ounce) cans Pillsbury Spring Funfetti Vanilla frosting (or something similar)
  • 1 1/4 cup flaked coconut
  • 2 to 3 drops green food coloring
  • 1 drop red food coloring for pink coloring inside the ears(optional)
  • Jelly beans
  • Black or red string licorice

Step 1

Prepare and bake cake in two 8 or 9 inch round pans following package directions.

Cool cake 10-15 minutes before removing from pan.

Line large tray or cover 18 x 15-inch cardboard with foil. Frost sides of all cake pieces with frosting.

Cut cake into shapes. This cake needs only two round cake pans to shape into a round bunny body, an inside circle for the head from one of the pans and the remaining edges for the ears. Or you can just make the head of the bunny from one of the pans and cut out the ears from the other pan.

Assemble pieces on foil-lined tray.

Frost top of cake with remaining frosting. Immediately sprinkle candy bits evenly on center of ears and bow tie. A tie is perfect, but you can depict buttons, lace, etc. Whatever you'd like! Use the green-colored coconut to sprinkle around the cake.
