1 peck green tomatos
12 large onions
12 green peppers
6 sweet red peppers
12 cloves garlic minced
4 lbs brown sugar
2 tablespoons dry mustard
1 tablespoon salt
2 tablespoons cloves
2 3 inch sticks cinamon
2 tablespoons ginger
1 tablespoon celery seed

combine 1 peck tomato with 12 large onions. Sprinkle with 1 cup pickling salt and let stand 12 hours refrigerated. After 12 hours rinse and drain. Seed and remove membranes from green and red peppers. Add 12 cloves garlic minced brown sugar dry mustard and salt. In cloth bag combine cloves, cinamon sticks ginger and celery seed. Simmer mixture about 1 hour or until tomato is transparent. Place in canning jars and process in boiling water bath
