Ingredients

  • 1 onion
  • 1 red bell pepper
  • 1 leek
  • 2 jalapeno
  • 4 cloves garlic
  • 1 can of tomato peeled deseeded diced tomatoes
  • 3 corn tortillas
  • 2 cups chicken stock
  • 1 bunch cilantro leaves
  • 1/4 cup of Sour cream
  • 1/2 cup Shredded chicken (make your own or buy pre made rotisserie chicken)
  • 2 cups Tortilla Chips

Preparation

Step 1

Small diced onion, leak , and red bell peppers to equal pieces, mice the garlic and jalapeno leaving out the seeds.
Heat up large pot and add oil to it
Once oil is hot add onion, red bell, and leek, jalapeno
Add canned tomato and chicken stock, simmer for ½ an hour.
In a sauté pan heat up oil (about an inch deep) and once it is hot fry the tortillas until they are beginning to be crunchy.
Add soup mixture to a blender, and blend, slowly rip up fried tortillas and add them to the blender (you may have to do a few batches before it is all finished).
Add back to the pot and cook for a ½ an hour longer.
To serve add toppings: sour cream, chicken, guacamole, or tortilla chips
