The boyfriend is English thus we make lots of popovers. This recipe is a great way to add some flavor.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1 cup shredded sharp cheddar cheese
  • 3 scallions, trimmed & chopped

Step 1

Coat 8 cups of a popover or standard muffin pan with cooking spray. Fill empty cups with 1/2 inch water. Preheat oven to 450 degrees.

In bowl, whisk together flour and salt. In second bowl, whisk together eggs and milk. Add flour fixture; stir just until blended. Fold in cheese & scallions.

Fill prepared cups 3/4 cup full (about 1/3 cup batter in each). Bake for 15 minutes. Reduce oven temperature to 350 degrees and bake 10-15 more minutes, until browned & puffed. Keep oven door closed until baking is done. If not your popovers will not POP!

Remove popovers from oven and immediately remove from pan. Serve warm.
