  • 1 cup blanched almonds
  • 1/2 cup sugar
  • 1/2 cup confectioner's sugar
  • 1/8 cup honey
  • 2 egg whites
  • 2 teaspoons vanilla
  • 3/4 cup flour
  • confectioner's sugar, for dusting

Step 1

Preheat oven to 300F. Spread blanched almonds in a single layer on a baking pan. Bake 20-30 minutes. Stir a few times. Let cool. Grind in blender to powder. Add sugar, honey, egg whites, and vanilla until well mixed. Add flour. A soft dough will form. If too soft ass a bit more flour-do not create a stiff dough. Sprinkle cutting board with powdered sugar. Drop tsp of dough roll into a small ball. Drop on baking pan and flatten with a spatula. Dust with powered sugar. Bake until cookies are set but not brown. 10-15 minutes. Dust again as soon as they come out.
