This recipe fits into an 8 x 8 square baking pan but can easily be doubled for a 13 x 9. If you like you could add cheddar cheese also.

Ingredients

  • Cooking spray to coat baking pan
  • 2 medium zucchini sliced thin or grated
  • 1 1/2 tsp. salt
  • 1/2 tsp. white pepper (black is fine too)
  • 1 cup all purpose flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. garlic powder
  • 2 eggs
  • 2 egg whites
  • 1 cup finely chopped onion
  • 1/2 tsp. dried oregano
  • 1 cup grated parmesan cheese

Step 1

Preheat oven to 350.

Lightly spray baking pan with the cooking spray.

In a medium bowl whisk the eggs and whites until lightly foamy. Add the onions and cheese to the eggs.

In a large bowl combine the flour, baking powder, garlic powder, salt and oregano.

Add the egg mixture to the dry ingredients and stir to combine. Fold in the sliced zucchini. The batter will be stiff.

Spread the mixture into the prepared pan.

Bake for 30-45 minutes until it starts to turn golden brown and is set.
