Ingredients

  • 2 tbsp canola or vegetable oil, divided
  • 1 lb boneless skinless chicken thighs cut into bite size
  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 tbsp ginger, finely chopped
  • 2 tbsp butter
  • 2 tsp lemon juice
  • 1 tsp each: garam masla and cumin
  • 1/4 tsp cayenne pepper
  • 1 cup tomato sauce
  • 1 cup carnation reg 2% or fat free evaporated milk
  • 1/4 cup plain yogurt
  • salt and pepper to taste

Preparation

Step 1

Heat 1 tbsp oil in large saucepan over med-hi
Cook chicken until lightly browned, about 10 min. Remove chicken and set aside
Heat remaining oil in large saucepan over med-hi
Saute onion garlic and ginger until soft and fragrant. Stir in butter, lemon juice and spices
Cook stirring, one minute. Add tomato sauce and cook 2 min, stirring frequently
Stir in milk and yogurt
Reduce heat and simmer 10 min, stirring often
Add reserved chicken to sauce and bring sauce to boil
Reduce heat to low and simmer 15 min until sauce thickened and chicken cooked through
