  • 2 Small Potatoes
  • 2 Eggs
  • Milk
  • I link of Chorizo Sausage ( nitrate free if possible)
  • 4 Whole Wheat Tortillas

Preparation

Step 1

Peel two small potatoes and set them aside.


Add about two tbsp Olive Oil in a pan and turn on med heat.


Cut the potatoes into small pieces and add them it the hot sizzling pan!


Brown potatoes on each side and then cover the pan for about five minutes and then add the chorizo.


While the chorizo is cooking down crack two eggs into a bowl and add a little milk and pepper and mix. (should look like you were making scrambled eggs)


Once the chorizo is cooked make a hole in the center of the pan and add the egg mix and keep stirring until the eggs are fully cooked. Put 4 whole wheat tortillas in the microwave for about 30 second or until soft and then prepare your burritos! If you have a little extra you can put some chorizo in the middle of the cut burritos like I did! Enjoy!


P.S This is delish with or without tortillas!
