Haddock Fillets dipped in a Russian dressing mixture, then rolled in cornflakes.

| 2 | large eggs, lightly beaten |
| 4 | T water |
| 1 | c Russian salad dressing (Wish-bone) |
| 2 | T seafood seasoning (Old Bay) |
| 5 | c cornflake cereal, crushed, (2 cups crushed) |
| ⅓ | c finely chopped pecans |
| 3-11 | x3x1 inch squares Haddock Fillet, (Icelandic) cut in half, thawed if frozen |
| 1 | stick butter, melted |
| 2 | lemons |
Cooking Directions
Preheat oven to 350
In a shallow dish stir together, eggs, water, salad dressing, and seafood seasoning.
Place crushed cornflakes cereal and chopped pecans in a shallow dish
Dip fish fillets in egg mixture, then dredge in crushed cornflakes, coat well
Place coated fillets in a 13×9 in baking dish
Drizzle with melted butter, Squeeze lemon juice over all.
Cover dish with tin foil
Bake at 350 for 30-35 mins
Remove foil, Bake for an additional 15-20 mins or until cereal is golden brown and fish flakes easily with a fork
