Ingredients

  • 2 Tbsp olive oil
  • 1 lb. skinless, boneless chicken cut
  • into strips
  • 1 pkg. fajita seasoning
  • 1 red bell pepper cut into thin strips
  • 1 green bell pepper cut into thin strips
  • 1 poblano pepper cut into thin strips
  • 1 large onion, cut into thin strips
  • 1 14.5 oz can fire roasted diced
  • tomatoes
  • 1 15 oz. can seasoned black beans
  • 2 14oz. can chicken broth
  • 1 dash hot sauce
  • salt and pepper to taste

Preparation

Step 1

Heat oil in a large soup pot over med. Place chicken in hot oil; cook, stirring only occsionally, until brown, about 10 min. Sprinkle fajita seasoning over browned chicken and stir well to coat. Add the red, green and poblano peppers and onion to the seasoned chicken. Stir and cook over medium heat until veggies are soft, about 10 min.

Pour the fire roasted tomatoes, black beans, and chicken broth into pot with the chicken and veggies. Bring the soup to a broil over high heat, then reduce heat to med.-low, and simmer uncovered for 30 min., stirring occasionaly.

Season the soup with hot sauce, salt and pepper to taste
