Ingredients

  • 1 1/2 pounds beef stew meat
  • 3 tablespoons oil
  • 2 large potatoes
  • 4 to 5 large carrots
  • 1 large onion
  • 1 can green beans with liquid
  • 2 cans diced tomatoes with liquid
  • Salt
  • Pepper
  • 2 Bay leaves
  • 2 tablespoons cornstarch
  • 1/3 cup cold water

Step 1

Dice the potatoes, carrots, onions so that they are uniform in size with the stew meat.

Using the browning setting on your cooker, brown the stew meat in the oil.

Add the potatoes, onions, carrots, green beans and tomatoes. Season with salt and pepper. Add bay leaves. (I have also added a couple tablespoons Italian seasoning or added dry onion and mushroom soup mix).

Pressure cook on high for 15 minutes. Carefully release the steam and depressurize the cooker.

Remove the bay leaves. Mix the corn starch and water together. Add to the pot and simmer for about 5 minutes. Enjoy!
