| 2 | tbsp. butter, softened |
| ¼ | tsp. almond extract |
| 2 | eggs |
| ½ | c. Bisquick baking mix |
| ¼ | c. sugar |
| Streusel: | |
| 2 | tbsp. firm butter |
| ½ | cup Bisquick, |
| ½ | cup firmly packed brown sugar |
| ½ | tsp. cinnamon |
Grease 10 × 1 1/2 inch pie plate.
Beat all ingredients except pie filling until smooth, 15 seconds on high in blender or 1 minute with hand beater.
Pour into pie plate.
Spoon pie filling evenly over top.
Bake 25 minutes.
Top with Streusel.
Streusel:
Cut butter into Bisquick, brown sugar and cinnamon; mix until crumbly.
Sprinkle this on top of pie filling.
Bake until streusel is brown, abut 10 minutes.
Cool.
Refrigerate any remaining pie streusel.
