  • 1 1/2 cups apple, peeled and diced
  • 3/4 cup golden raisins
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups packed light brown sugar
  • 2 eggs
  • 1/2 cup butter or margarine, softened
  • 1 tsp vanilla extract
  • Non-Stick Cooking Spray

Preheat the oven to 350 degrees Fahrenheit. Liberally coat a 13"x9"x2" baking pan with non-stick cooking spray; Set aside. In a medium sized bowl, whisk together the flour, baking powder, salt, and cinnamon; Set aside. In a large bowl, on medium speed, blend together the sugar, eggs, butter, and vanilla for 3 minutes or until smooth. Gradually add the flour mixture and mix until incorporated (2 minutes). Stir in the apples and raisins. Spread the mixture into the prepared pan. Bake for 35 minutes or until a toothpick inserted in the center comes our clean. Cool completely before cutting into squares. Refrigerate any leftovers.
