
| 1 | cup green grapes |
| 3 | cups diced turkey breast ( 2½ lbs. for double batch) |
| 2 | cups cooked wild rice |
| ½ | cup thinly sliced celery |
| ½ | cup toasted slivered almonds |
| ½ | can mandarin oranges (drained) |
| Dressing: | |
| 2 | tbsp oil |
| 1 | tsp. vinegar |
| 2 | tsp. sugar |
| ½ | tsp. salt |
| ¼ | tsp. pepper |
| ¼ | tsp. dry mustard |
| 2 | tbsp. chopped crystallized ginger |
| 1 | cup mayo |
Combine all dressing ingredients and add remaining ingredients to dressing. Refrigerate one to two hours.
Tips:
Add oranges at the last minute
Turkey from the deli counter, cut ¾” thing (then cubed)
Cook 2 cups uncooked rice for 4 plus cups cooked.
