Ingredients

  • 2 pounds beef cubes
  • 6 cans (29 ounces) diced tomatos
  • 4 cans (14 ounces) diced potatoes, drained
  • 5 pounds mixed vegetables
  • Seasoning to taste
  • 2 to 3 teaspoons dried basil
  • 2 to 3 teaspoons oregano
  • 2 to 3 teaspoons red pepper
  • 2 Knorr Home style stock Beef season

Preparation

Step 1

Trim any fat off the beef cubes and place in stock pot, boil until done.

Place cooked beef in to large stock pot or roaster oven. Add drained potatoes and mixed vegetables.

Take the cans of diced tomatoes and place in blender and puree, add to stock pot.

Add Seasoning (Season to taste)

Cook in stock pot or roaster oven.

I use the roaster oven and set it at 350 and cook till vegetables our tender. I also start cooking the day before so I know the vegetables are done.
