This is another good recipe from old friend Carole Olson.
| 2 | lbs. lean beef stew meat |
| salt, pepper, and paprika | |
| 2 | Tbsp. dry onion soup mix |
| 6 | medium potatoes |
| 8 | white boiling onions (quarter regualr sized onions) |
| 3 | carrots, quartered |
| 1 | can cream of celery soup |
Season meat with salt, pepper, and paprika and onion soup mix. Place in Dutch oven. Add whole potatoes, onions, and carrots. Blend soup with 1/2 can water and 1/4 C. vermouth or wine. Pour over meat. Cover and bake at 250-300 degrees for 4 hours. Can serve over rice; then use fewer potatoes.
I usually use cream of chicken soup and water only. Also I use more dry onion soup mix.
