Melted Brie & Fig Jam Panini
Recently, I made a simple and delicious Fig Jam. On a whim, I decided to make a Panini Sandwich with brie and the fig jam. Wow! This was excellent! The next time I make this, I might be tempted to add caramelized onion.

Ingredients
| 4 | slices of French Bread |
| Olive oil | |
| 2 | Tbsp. of fig jam (adjust to your preference) |
| 2-3 | slices of thinly sliced brie |
Directions
I don’t own a panini press. I used a cast iron skillet/grill and a bacon press!
Coat the skillet/machine with olive oil.
I like to add a thin layer of unsalted butter.
Grill the panini according to your machine’s direction…or, if you don’t own a machine, grill on one side and weigh down with a bacon press or even a brick covered with foil.
