| 1 | lemon |
| 12 | ounces beef tenderloin, grilled and sliced |
| 5 - 8 | ounces arugula |
| 1 | bulb fennel, thinly shaved |
| 1 | bunch asparagus, trimmed, grilled, and slightly chilled |
| 1 | pint grape tomatoes, halved |
| 1 | red onion, sliced, grilled, and slightly chilled |
| ½ | cup low-fat feta cheese, crumbled |
| 3 | tablespoons olive oil |
| salt | |
| pepper | |
| 10 | chives, chopped |
1. Remove zest and juice from lemon, set aside.
2. In a bowl, combine beef tenderloin, arugula, fennel, asparagus, grape tomatoes, red onion, low-fat feta cheese, lemon juice, olive oil, salt, and pepper.
3. Top with lemon zest and chives
