
A great accompaniment to a traditional “meat and potatoes” meal. If you’re already roasting a protein in the oven these potatoes can go right along the bottom of the pan or in their own separate pan depending on your preference.
| 2 | lbs Small Red or Golden Potatoes, quartered |
| 5 | Pats of Butter |
| ¼ | Cup of olive oil |
| 1 | Lemon, juiced |
| ½ | Onion, sliced |
| 4 | Tbsp Water |
| Salt | |
| Pepper | |
| Oregano | |
| Garlic Powder |
Preheat oven to 350 degrees. Combine all ingredients in a roasting pan and cook uncovered for 35-40. Move around the potatoes every 10 minutes so they don’t stick to the pan. Add a little water if they get stuck.
