
This is one of my favorite chicken recipes. Although the chicken takes a while to cook the actual preparation is really simple. The taste is fantastic and it’s always a crowd pleaser!
| 12 | chicken pieces (thigh, leg, wing) |
| ½ | onion, diced |
| ¼ | cup olive oil |
| ¼ | cup of red or white wine |
| handful of fresh herbs ( thyme, oregano, rosemary,etc.) | |
| salt and pepper to taste |
Wash chicken pieces and pat dry, add salt and pepper. Pour oil and add chopped onion to a deep sauté pan, on high heat. Immediately add chicken and brown on all sides. Next turn heat to low, add herbs and wine. Place a cover over the pan and good for 1½ to 2 hours.
Continue to check on and turn the chicken as it is cooking. Make sure there is always some liquid in pan so chicken does not burn. If the pan starts to dry up just add a bit of water. Chicken is ready when it is tender enough to fall off the bone. Serve warm.
