| 1 | baked 9" pie shell |
| 1½ | c. sugar |
| 3 | Tbsp. cornstarch |
| 1 | Tbsp. flour |
| pinch of salt | |
| grated rind and juice of 2 lemons | |
| 1⅓ | c. water |
| 3 | eggs, separated |
| 3 | Tbsp. sugar |
Combine sugar, cornstarch, flour and salt. Add lemon rind and juice, water and egg yolks. Cook until thick. Pour into baked shell. Beat egg whites until stiff. Gradually add 3 Tbsp. sugar and beat until dissolved. Spread on pie. Bake at 350 degrees until lightly browned.
