Ingredients

  • 3 ripe bananas or 1 cup pumpkin
  • 3/4 cup butter
  • 1 cup water
  • 1 1/2 cups raisins
  • 1/4 cup buttermilk
  • 1 1/2 cups brown sugar
  • 3 eggs
  • 1 cup white flour
  • 2 cups whole wheat flour
  • 3 tsp cinnamon
  • 4 tsp baking soda
  • 1/2 tsp salt
  • protein powder
  • 3 1/2 cups rolled oats
  • 1/2 cup wheat germ
  • 1 cup chocolate chips

Preparation

Step 1

In a mixing bowl, combine flours, cinnamon, baking soda, and salt. Set aside.

Blend bananas and butter.
Combine water and raisins in a microwave safe container and heat for 1 ½ minutes in microwave. Blend raisins and water together to puree. Add raisin puree, buttermilk, to banana mixture. Mix until well-blended.
Add brown sugar and eggs and mix until combined.
Add dry ingredients, oats, wheat germ, and chocolate chips. Mix until combined.
Fill muffin tins and bake for 15-20 minutes at 350 degrees. Make 24 muffins.
