| 1 | yellow squash, sliced thin |
| shallots, minced | |
| mixed herbs, chopped | |
| lemon juice | |

Thinly slice the squash and zucchini with a mandoline. Arrange a few slices on a platter in a single layer. Sprinkle with shallots and herbs, drizzle with lemon juice and olive oil. Season with salt and pepper. Can sprinkle with pistachios on the top.
