Caprese Stuffed Cherry Tomatoes

- 24 cherry tomatoes
- 4 ounces part-skim mozzarella cheese
- 2 tablespoons snipped fresh basil
- 1 tablespoon white balsamic vinegar
- 1/4 teaspoon black pepper

Step 1
Using a sharp knife, cut off the top third of each cherry tomato on the stem end. Hollow out the cherry tomatoes; invert on paper towels to drain. Set aside.
Cut the mozzarella into 24 equal cubes. In a medium bowl combine the cheese cubes, basil, vinegar, and pepper. Stuff each tomato with a coated cheese cube.
