| 2 | lbs fresh ground fatty pork |
| 1 | tsp dried sage |
| 4 | cloves garlic, crushed and minced |
| ½ | cup onion, very finely minced |
| 1 | tsp dried cayenne, crushed |
| 1 | Tbsp kosher salt |
| 1 | tsp fresh ground black pepper |
Combine all ingredients and form into a 2” wide log. Wrap in plastic and refrigerate until ready to use. Slice off patties and fry in dry cast iron skillet.
