Ingredients

  • Crust:
  • 1/2 cup Butter
  • 1 cup Flour
  • 1/3 cup Brown Sugar
  • 2 tbsp Milk
  • Bars:
  • 2 Eggs
  • 1/2 cup Brown Sugar, packed
  • 3/4 cup Coconut
  • 1/2 cup Nuts, chopped
  • 1/8 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 tsp Vanilla
  • Icing:
  • 2 tsp Lemon Rind, grated
  • 2 tbsp Lemon Juice
  • 1 cup Confectioners Sugar

Preparation

Step 1

Crust:
Cut the butter into the flour and brown sugar until it looks like a coarse meal. Then add 2 tablespoons of milk. Pour into ungreased 11x17 pan and press firmly. Bake 10-15 minutes. !Watch! until set, not brown!

Filling:
Beat the eggs until well mixed and add the brown sugar, coconut, nuts, baking powder, salt and vanilla. Mix well and spread over partially baked crust. Bake at 350 degrees for 20 to 25 minutes.

Icing:
Mix the lemon rind, lemon juice and confectioners sugar. Mix until smooth. Pour over the bars as soon as they come out of the oven. When cool, cut into squares.
