Breakfast Banana Muffins PRINT
|2¼||c all purpose flour ( half whole wheat if desired)|
|3||t baking powder|
|4||overripe banana or may use some combination of bananas, apples or pears|
|1½||cup sugar ( may use brown sugar or splenda /brown sugar mixture|
|¾||c unsalted butter|
Preheat oven to 375. Combine first 4 ingredients, mix well. Set aside.
Combine bananas and sugar with mixer beating about 3 minutes.
Add softened butter, eggs and vanilla. Beat.
Mix in dry ingredients till well incorporated.
Fold in nuts. May want to roast nuts before using.
Bake for about 20 minutes.
