Ingredients
- 2 bags (9 oz.) of spinach (regular or baby)
- 2 teaspoons dark sesame oil
- 1 garlic clove, minced
- 1 teaspoon fresh ginger, peeled and grated
- 1/4 teaspoon crushed red pepper
- 1 tablespoon reduced-sodium soy sauce
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1 teaspoon toasted sesame seeds

Step 1
1. Bring about 3" of water to boil in a large pot. Place the spinach in a steamer basket, add to the pot, and steam until the spinach is just wilted and bright green, no more than 3 minutes. Transfer the spinach to colander and allow to drain and cool for 5 minutes. Squeeze the spinach to remove excess moisture.
2. Heat the sesame oil over medium-high heat in a large nonstick skillet or wok. Add the garlic, ginger and red pepper and cook, stirring, until fragrant, no more than 30 seconds. Add the spinach and cook, stirring, for 1 minute. Stir in the soy sauce, sugar and salt and cook until heated through, about 1 minute longer. Sprinkle the sesame seeds over the mixture and serve.
