Banana Chocolate Muffins

This is a healthy muffin recipe which has less sugar, less butter and has a soft, moist, and spongy texture like banana cake. Perfect for breakfast, snack or dessert.

Ingredients

2 cups all-purpose flour
cup brown sugar
cup white sugar
1 tbsp ground cinnamon
2 tsp baking powder
¼ tsp salt
1 cup mash bananas (3 ripe bananas)
1 large egg
½ stick butter (room temperature and cut into small cubes)
¼ cup plain yoghurt (optional)
¼ cup milk
1 tsp vanilla extract
cup chocolate chip (I prefer Hershey's semi-sweet)

Directions

1) Mix flour, sugar (brown and white), cinnamon, baking powder and salt in one bowl

2) In a separate bowl, mix egg, butter, yogurt, milk, vanilla and mash bananas with electric mixer (about 1 min). Butter will give the muffin a nice shine, but if you want to use less butter, replace same amount with yoghurt or with vegetable oil.

3) Add flour mixture (dry) into egg mixture (wet) and mix with a spatula until the dry mixture is blended into the wet mixture. – DO NOT OVERMIX

4) Add chocolate chips and fold into mixture

5) Pour into greased muffin pans and place into a preheated oven 190C (350F). Bake for 20 mins.
