Slow Cooker Beef & Bean Chili (WW 5pts) 1 Picture

Ingredients

  • 1 pound beef ground, very lean, 95% lean
  • 2 onions, whole — diced
  • 4 cloves garlic
  • 1 green pepper — diced
  • 28 ounces crushed tomatoes
  • 8 ounces tomato sauce
  • 2 cans Rotel tomatoes with green chiles (or use 2 cans diced tomatoes and 1 can chopped green chiles)
  • 14 ounces tomatoes, canned
  • 2 small cans canned red kidney beans — drained
  • 1 small can canned black beans — drained
  • 2 cups low sodium beef broth
  • 4 tablespoons chili powder — or to taste
  • 1 tablespoon ground cumin — or to taste
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground coriander
  • 1 teaspoon ground mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce — I like Chipotle Cholua — or to taste

Step 1

Saute ground beef with onion, garlic and green pepper until beef is no longer pink and vegetables are cooked.
In crock of slow cooker add all of the ingredients, stir, cover and let cook on high for 3-4 hours or on low for 6
-8 hours. This recipe freezes well!
Serving Ideas:
Put 1/2 cup of cooked rice in the bottom of the bowl before putting a ladle of chili on top. Top with cilantro, shredded cheese, light sour cream or diced avocado. Good Eats!
Great over an Uncured Applegate Farms hot dog on a whole grain bun for a chili dog.
