Cole Slaw with Balsamic Vinaigrette

For the salad:
4 cups cabbage, sliced (1 cup per person)
2 cups shredded carrots
For the Dressing:
4 Tbs. balsamic vinegar
2 Tbs. red wine vinegar
1 Tbs. Dijon mustard
2 tsp. light brown sugar
2 garlic cloves, minced
2 tsp. poppy seeds
½ cup extra virgin olive oil
Salt & pepper to taste


1. Assemble the cabbage and shredded carrots in a large bowl. 2. In a small bowl, mix together the first 6 ingredients of the dressing. Slowly add the olive oil, while whisking vigorously to create an emulsion. Season with salt and pepper to taste.
