1 onion chopped
1 green pepper
2 cloves of garlic
one packet of chili seasoning
1 tsp. cumin powder
1 tbs. chili powder
2 (14 oz.) cans Hunt Diced Tomatoes w/ sweet onions
1 can Rotel Tomatoes ( mild or med)
1 can Chili Beans
Tabasco ( can add a few drops)
1 can Red Beans (drained, not rinsed)
1 can Kidney Beans ( drained, not rinsed)
1 can chopped green Cnilis ( Old Paso Brand is good)
¼ cup brown sugar
¼ cup Jack Daniels

Brown ground beef in large pot and drain fat. Add chopped onion and garlic to pot. Sprinkle in packet of chili seasoning. Cover and simmer for approx. 10 min. Add 1 tsp. cumin power and 1 tbs chili power to mixture. Stir well. add the following to pot: 2 cans Hunt Diced Tomatoes w/ Sweet onions 1 can Rotel Tomatoes ( mild or med) 1 can red beans ,drained 1 can kidney beans , drained 1 can chopped green chilis Stir all together and simmer for approx. 30 min. Uncover and add 1/4 cup brown sugar and 1/4 cup Jack Daniel Whiskey. Stir again, cover and simmer on low heat, stirring occasionally. Flavors develop the longer it cooks. Mashing some beans will make the mixture nice and thick. Add more sugar / whiskey to taste in equal proportions if desired. I usually serve with homemade guacamole and chips in the summer and corn bread in the winter. Freezes well cooked macaronic in the bowl makes it chili - mac. Can top with grated cheese chppped onions/ green onions / sour cream if desired.
