Using unsweetened coconut milk and Thai Sweet Chili Sauce, you can easily transform ordinary rice into a tasty side dish.
I especially like to serve this rice with my Cashew Chipotle Chicken Recipe.
| 1 | (14-oz.) Can Coconut Milk (I used the lite version...don't confuse with Sweetened Coconut!) |
| 2 | cups water |
| 2 | cups rice (I use Jasmine rice) |
| 2 | Tbsp Sweet Chili Sauce (readily available in the international aisle of most grocery stores) |
