Using unsweetened coconut milk and Thai Sweet Chili Sauce, you can easily transform ordinary rice into a tasty side dish. I especially like to serve this rice with my Cashew Chipotle Chicken Recipe.
|1||(14-oz.) Can Coconut Milk (I used the lite version...don't confuse with Sweetened Coconut!)|
|2||cups rice (I use Jasmine rice)|
|2||Tbsp Sweet Chili Sauce (readily available in the international aisle of most grocery stores)|
Bring water to a boil Add coconut milk & sweet chili sauce Add rice Cover and turn heat to low and cook for approximately 20 minutes
