A good way to make children eat vegetables
| 1 | eggplant, diced, |
| 2 | zucchini, sliced, |
| 1 | carrot, sliced, |
| 1 | fennel, cut into large pieces, |
| 2 | tablespoons peas, |
| 1 | small green pepper, finely chopped, |
| 1 | small red pepper, finely chopped, |
| 1 | large onion, cut into large pieces, |
| 2 | tablespoons tomato paste, |
| 1 | cup white wine, |
| 1 | cup water |
| 1 | tablespoon thyme, |
| 1 | cup finely chopped parsley, |
| 1 | tablespoon olive oil. |
Put the green and red pepper in the ActiFry. Cook for 10 minutes.
Add the oil and continue to cook for 5 minutes. Add the wine and tomato paste mixed with the water. Season with salt, pepper and add the thyme. Cook for 15 more minutes.
Open, add the chopped parsley and serve in a dish. You can eat this vegetable sauce alone or serve it with pasta or rice pilaf with butter.
Chef Recommendations:
Try adding two tablespoons of finely chopped basil, and a handful of small black olives along with a dash of balsamic vinegar. You can also replace the thyme with coarsley chopped coriander seeds.
