- LEMON CURD, OPTIONAL:
- 3/4 cup fresh lemon juice
- 1 tablespoon grated lemon zest
- 3/4 cup sugar
- 3 eggs
- 1/2 cup unsalted butter, cubed
- FROSTING:
- 3/4 cup creme of coconut, not coconut milk
- 1/2 cup unsalted butter, 1 stick, 4-ounces
- 5 1/2 cups confectioners’ sugar, divided, 22-ounces
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 1/4 teaspoon almond extract, optional
